Loose structure. Low density. Good liquidity. Strong adsorption. Tasteless or slightly sweet. Soluble in water. Not easy to absorb moisture. by α- Maltooligosaccharides and low molecular dextrins composed of 1 and 4 glycosidic bonds, about 8% maltose and about 1% glucose. In industry, cassava starch (or other starch) is generally hydrolyzed by starch and then refined, concentrated and spray dried.
