Trehalose is a disaccharide widely existing in animals, plants and microorganisms in nature. It is composed of two glucose molecules α,α- The non reducing sugar formed by 1,1-glycosidic bond can be written according to its chemical structure α- D-glucopyranosyl - (1 → 1)- α- D-glucopyranoside, in addition to α,β- New fucose and β,β- There are two isomers of isotrehalose, but they are rare in nature. Trehalose dihydrate precipitated from dilute ethanol is colorless or white orthorhombic biquinate crystal with sweet taste. As a food additive and sweetener, the sweetness is equivalent to 45% of sucrose. As it is not a reducing sugar, Maillard reaction browning will not occur when it is co heated with amino acids and proteins.
